This recipe's Great for a quick snack!
Cook:Tomato Bruschetta!
Recipe:
(Makes enough for 4 people)
What you need:
-1 small baguette
-4 tablespoons of extra virgin olive oil for drizzling
-8 ripe plum tomato's
-1 clove garlic
-freshly ground black pepper (optional)
-a few fresh basil leaves (optional)
Step 1
Turn the oven on to 180c/350f/gas mark 4.Using a serrated knife cut the bread into 8 slices.Lay the bread flat on a baking tray.Drizzle 2 tablespoons of the olive oil all over the slices.
Step 2
Put the tray in the oven.After 10 minutes,take the tray out,carefully turn the bread over and then put back into the oven for another 10 minutes.
The bread should now be a light golden colour and crisp.Take the bread out of the oven and rest the tray on a pan stand.Leave to cool slightly.
Step 3
For the tomato topping,cut a ripe plum tomato in half.Dice the Tomato half's.Peel the skin away from the garlic clove.Pick up a slice of the toasted bread and and rub both sides with garlic.Do the same with the other slices of bread.Put the toasted bread on a big plate,divide the tomato's among them and drizzle with the olive oil.If you like you can sprinkle it with black pepper and basil leaves torn into small pieces.
