Cupcakes

One Word: Delicious.These beautiful creations are mini cakes of joy...to become the master of making cupcakes start with the simple-to-make-cupcakes with this great recipe....which you can of course change to your satisfaction (with nuts,chocolate chips,berries etc!) 

Ingredients:

Cupcakes:
* 125g butter softened 
* 1 teaspoon vanilla essence
* 2/3 cup caster sugar
* 2 eggs
* 1 1/4 cups self raising flour,sifted
* 1/3 cup milk
* Pink food colouring
* 1 tablespoon cocoa powder
* 2 teaspoons extra milk

Butter Cream:
* 125g butter,softened
* 1 1/2 cups icing sugar,sifted
* 2 tablespoons milk 
* Pink food colouring

Instructions:

1.Preheat oven to 180c.Line a 
12-hole muffin pan with paper cases.

2.Beat butter,vanilla extract,sugar and eggs 
in a small bowl with an electric beater until fluffy.

3.Stir in flour and milk in two batches.


What happened to us ?

4.Divide the mixture among 3 small bowls.Tint
one mixture pink.Blend the sifted cocoa with the extra milk in a cup,then stir into the second bowl of mixture leaving the third bowl plain.

5.Drop a spoonful of each mixture into the paper cases.Pull a skewer through the uncooked cupcakes for a marbled effect.

6.Bake for about 20 minutes.Stand cakes in pan for five minutes before putting on wire rack to cool.

7.Make the butter cream icing by beating butter
in a small bowl with an electric mixer until as white as possible.Beat in the icing sugar and milk in 2 batches.Stir in pink food colouring.

8.When cupcakes are cooled spread the pink butter cream icing over the cupcakes and decorate with (what else?) but your imagination!!!
